Gevrey-Chambertin 1er cru Les Fontenys

At its southern limit, Les Fontenys borders on the great Mazis-Chambertin and Ruchottes-Chambertin wines. We vinify a 0.40 hectare plot (≈ 1 acre), with 45-year-old vines on a clay-limestone soil, with just the right amount of stones.
This Premier Cru Les Fontenys is a full-bodied wine with smooth firm tannins. The expression is complex, with red fruits (cherry and strawberry), liquorice, and flower petal notes (peony and black roses). This firm and silky texture is expressed in the length of a velvety finish. This is an excellent introduction to the Grand Cru wines of the appellation.
Can be kept for 10 to 20 years, but you will be able to drink it in the first 5 years by decanting one hour before serving the wine.
Depending on the vintage, we use 50% whole-bunch fermentation, and ageing lasts about 18 months in barrels (with 20% of new barrels).

It will pair well with a fillet of venison served with fresh cranberries, autumn fruit and vegetables, and a chestnut cromesquis (croquette), but also with cheeses of character.
